Mike's Whole Wheat/Amaranth Pancakes

Dry Ingredients
1 cup whole wheat flour
1/2 cup amaranth flour
1 tsp. salt
3 Tbsp. sugar or 1 Tbsp. honey
1 tsp. baking powder
1 tsp. baking soda

Wet Ingredients
1 to 2 eggs
3 Tbsp. melted butter or margarine
1 to 1-1/8 cups milk or buttermilk


Sift the dry ingredients together. In another bowl, blend the wet ingredients. Add the wet ingredients to the dry and stir just until combined. Cook pancakes on heated griddle until bubbles form; then turn over. Gluten-allergic people could substitute rice flour or potato flour instead of wheat.
