Mike's Amaranth Cornbread

1/3 cup cornmeal
1/3 cup amaranth flour
1/3 cup white or wheat flour
1 and 1/8 tsp. baking soda
1 and 1/8 tsp. baking powder
3/4 tsp. salt
1 egg
2 to 3 Tbsp. melted butter or margarine
3/4 cup milk


Grease a 9 x 9-inch pan and place in hot oven until sizzling hot. Meanwhile sift dry ingredients together. Beat egg, melted butter and milk in a separate bowl. Pour liquid into dry ingredients, combine with a few rapid strokes. Place batter in the hot pan and bake at 425° for about 25 minutes.
