Italian Bread Salad

Ingredients

Ingredients for dressing:
1 clove garlic
1/4 cup grated Parmesan
1/4 cup chopped parsley
1/2 cup chopped basil
1 Tbsp. lemon juice
3 Tbsp. rice vinegar
1/4 cup olive oil
Salt and pepper

Purée all ingredients in blender.

Salad ingredients:
14 oz. can Cannelini beans drained
8 Cherry tomatoes quartered
1 small cucumber peeled seeded and sliced
1/2 cup pitted Kalamata olives
3 cups cubed and lightly toasted Italian bread
1/4 cup toasted Pine nuts
1/2 cup grated Parmesan

Preparation

Mix first five salad ingredients with desired amount of dressing. Top with Pine nuts and Parmesan. Serve immediately.
