Garlic-Olive Oil Potatoes

6 medium Red or Yukon Gold potatoes
1 Tbsp. olive oil
1/4 tsp. salt
Freshly ground pepper to taste
2 Tbsp. fresh rosemary
3 large cloves garlic, peeled and sliced


Cut potatoes into halves and cut each half into quarters. Place pieces in a baking dish so they are in a single layer. Drizzle with olive oil, shaking the pan so all of the pieces are coated. Sprinkle with salt, pepper and rosemary. Shake pan again to coat pieces. Place garlic slices on and between pieces of potato. More garlic may be added according to taste. Bake in a preheated 400° over for 30 to 40 minutes, until potatoes are tender and golden brown.
