Candied Orange Beets

Yield: (Serves 6 as a vegetable side dish)

1 lb. fresh beets
1/4 cup butter, melted
1/2 cup granulated sugar
Juice of 1 large orange
Salt to taste


Wash beets. Leave tails and 1 inch of stems on. Place them in a roasting pan and roast at 400° for 1 hour. Cool slightly and peel. Slice beets evenly. Set aside. Put melted butter and sugar in medium saucepan, and cook over high heat stirring constantly until golden brown and caramelized. Add a little water if needed. Add orange juice, and cook until reduced and thickened to a syrupy consistency. Reduce heat and add sliced beets. Add salt to taste. Heat until beets are warmed through.
