Boiled Red Cabbage

1-1/2 heads red cabbage, shredded
1/2 cup cider vinegar
3 Tbsp. butter
1 to 2 Tbsp. granulated sugar
1/2 cup red currant jelly


Put shredded cabbage in large saucepan. Add cider vinegar and cook over low heat. Cook covered for about 40 minutes, stirring occasionally until cabbage has cooked down. Add butter, sugar and red currant jelly. Replace cover and cook slowly for another 40 minutes.
