Black-Eyed Pea Medley

1 bag dried black-eyed peas
1 red pepper, chopped
1 yellow pepper, chopped
1 tomato, seeded and chopped
1 cup white frozen corn, thawed
2 bunches green onions, chopped
1/2 jar jalapeno pepper slices, chopped

1 cup olive oil
1/2 cup white wine vinegar
2 garlic cloves, minced
Salt and pepper
Chopped cilantro
Chopped parsley


Cook black-eyed peas according to package directions. Add next 6 ingredients. Combine dressing and pour over pea mixture. Serve at room temperature.
